This Prosecco, which dates back to a time before modern autoclaves were used for the Martinotti method, is an authentic example of the region. It is variable and pleasantly unpredictable.

Prosecco Valdobbiadene DOCG Notae Colfondo Col Del Lupo is a dry sparkling wine with a natural, straight cork stopper. The grapes, mainly Glera, come from old vineyards in the Colbertaldo area. They are harvested by hand at the beginning of September and cultivated using traditional methods. With an alcohol content of 11% vol. and a minimal sugar residue of less than 1 g/l, it has a cloudy straw yellow colour.

In the first few months after maturing in the bottle, it reveals citrus and fruity notes that develop into more complex flavours over the course of a year. The aroma of bread crust and yeast is also noticeable. In the mouth, it is clean, dry and mineral, with a slightly bitter aftertaste typical of refermented Prosecco.

This wine should be stored vertically in a cool, dark place and aged for at least 6 months to realise its full potential. It is suitable for longer storage in the bottle and its character will continue to develop over time.

Serve at a temperature of 8-10°C. For a stronger flavour, you can turn the bottle upside down to mix the lees at the bottom. For a more delicate flavour, you can decant the wine and leave the lees at the bottom of the bottle.

It is an excellent accompaniment to cheese and charcuterie as well as pasta with fish or fried fish dishes.
